Pumpkin seeds bounty

This recipe was created in my search to incorporate more hemp and pumpkin seeds in my kids menu. Hemp and pumkin seeds aren’t the most delicious ones when eaten on its own, let’s face it. But combined with some coconut butter and some sweetener, these became so tasty and got a lovely colour! I covered the bars here with some green chocolate for some more appealing effect, but they are delicious without it too.

Serving: 12-14 bars

Ingredients for the middle mixture:

6TSp coconut butter

2TSp coconut oil, melted

6TSp pumpkin protein powder

3TSp hemp seeds

3TSp agave syrup

Ingredients for the green chocolate:

50 gr white vegan chocolate, melted

1/2tSp of spirulina

To make these bounty bars:

Mix the pumpkin protein and the hems seeds in a blender until you get the powder. Add the coconut butter, the coconut oil and the syrup, mix well and let your kids play with it making  the bars. Put the bars in the freezer (for 1-2 h).

Before taking out the bars from the frizer, prepare the green chocolate:

To make the green chocolate:

Mix in a blender the melted chocolate with the spirulina.

Cover each bar with chocolate.

Enjoy it!
