For her birthday at school this year Ilinca wanted poffertjes. For those who doesn’t know them, these are like small but rather thick pancakes which are traditionally eaten in Holland.
Thanks to globalization, you can nowadays find everything you want almost everywhere, no need to go to Holland for them. Even we love Holland so much. Of course, I had to start making poffertjes too, especially because we had such a good jam from Materne to pair them with.
I added some spinach not only because I am so obsessed about vegetables but also wanted to give them a little color. They were gone with the wind as quickly as they were made !

220 ml rice milk
1 tbsp cider vinegar
1/2 tsp baking soda
1 egg or 1 vegan egg ( 1tbsp flaxseeds and 3 tbsp water)
35 gr coconut flour
35 gr buckwheat flour
1 small banana
1tbsp almond butter
A handful of spinach
Salt
Coconut oil for cooking

Pour the milk into the blender, add vinegar and leave it for 10 min. This turns it into a sour milk and the pancake are so good like the buttermilk pancakes. Add the egg, soda, salt, spinach to the blender and blend them all together. Add the banana and the flours and mix again. The coconut flour tends to make the texture thicker so in case you need some more liquid, add milk or water. You need to get a creamy consistency. Heat a non-stick frying pan over a medium heat and add 1tsp of coconut oil. Make sure the entire base is greased. Using a large spoon, distribute around the pan. I get like 20-25 poffertjes every time on my 30 cm pan. When the surface starts to bubble, turn over and fry for another 2 more minutes. Remove from the pan and enjoy them with some good jam, as we did and some coconut cream.
